Completely agree. They almost become works of art rather than a documentation of thoughts and processes.

Indeed. Sketchbooks have their benefits. I carry one everyday. The trouble is at University, sketchbooks are marked against criteria that is very different to how people naturally work, meaning students feel they have to fill out 20 odd pages of research before starting the next "step". Very different to how people work in real life to get the job done. By keeping things loose, it eliminates a lot of restraints.
The bigger problem is that education institutions are outdated and people are forced to work in an unnatural way to get the grades. Then they get to industry and things are very different, and they are somewhat unprepared for what it takes to work in the 'real world'.

Interesting - I've checked all the given examples and non of them are that great. Seems like their is no leader in this space and possibly a gap in the market :)
