I really love the home screen man!
Post-Its and Sharpies for me.
I do have a Moleskin notebook I used to use, but I have the tendency to overthink when sketching on my notebook since it feels permanent. So I love Post-Its better where I can just throw off ones I didn't like.

As for copying symbols, not replacing the current one is very desirable. If it's replacing the old ones in your symbols directory, there's a good chance it accidentally ruin your current design.
I do have a solution for your icon problem that I use. You can actually change the symbols' BG color without affecting the symbol's rendering.
You can do it by selecting the symbol's artboard, change the BG color, and then turn off "Include in Instances". You can also turn off the "Include in Export" option to make sure you won't export the BG color when it's exported. Here's the screenshot on how to do it:

Interesting. They should've spent some more time in trying to simulate the reflection.
Well, you should consider yourself really lucky then. I used it everyday and always have to face bugs here and there.
One of the most frustrating is that the latest update this Oct makes all my plugins not working. Worse, saved documents from the latest version is not compatible with earlier versions, so I can't just roll back to earlier version even if it's possible and my coworkers are forced to update as well.
I'm (and my coworkers are) really looking forward for Adobe Comet now.
Well, if you want to be a UI Designer, this exercise truly helps a lot. You can improve the quality of your interface design: pushing pixels, typography, focal points, etc...
But if you want to be a UX Designer, Daily UI will not help you much—I do agree that UX covers UI as well but UX's greater chunk is on solving user's problems. Instead of doing Daily UI, I think it's best to practice by doing some Design Sprints. Talk to real users, solve real problems, then measure it. Take example this project by Francine Lee on Dropbox Photo. She didn't get paid by Dropbox, but I'm sure she learned a lot.
