I haven't watched it myself, but everyone recommends Jiro Dreams of Sushi as a classic look into craft and the pursuit of perfection. And though it isn't a documentary, I always think of Pixar's Ratatouille as one of the best stories ever told about passion, creativity, and artistry.
I loved Jiro Dreams of Sushi myself, but felt that it might fall out of the scope of the documentaries here. But now that you mentioned it, maybe not! It definitely does a great job at showing sushi as an art form. I'll probably add it to the list.
One more: Beauty is Embarrassing, a profile of the art director of Pee Wee's Playhouse, looks extremely awesome, but I've also not seen it.

Many of the films you list are also available through VHX, which let's you watch it DRM free, through an iOS app, roku or web streaming and pays out more to the filmmakers. Ah, thanks! The reason I picked Amazon, iTunes, etc. was that they are widely known and trusted. This is the first I'm hearing about VHX. I'll probably add this option to a few of the films!
