I enjoyed this article. I am going through a similar process in my first home. As a side note, what microwave did you go with?
In the UK, I managed to track down this relatively simple model, with only 2 dials. The timer dial is just like the one you proposed. The mirror door is terrible though.

That functionality looks nice. I bet you could even cut the power knob. I've never adjusted the power on my microwave. Have you?
I ended up just getting a Frigidaire or whatever. It frustrates me daily, but looks ok. It was the least adorned one I could find that didn't break the bank and sits above the range.
I think I adjust the power once, to defrost something. But it's quite rare and could potentially be turned into a switch for 'High/Low'. Not sure it needs 6+ power ranges.

But what's the the random italics/widths of the copy? The obsessive in me couldn't find any rhyme or reason to the random copy changes.
And you know that all microwaves used to have knobs right? I agree it would be a nice choice, but you've gotta at least acknowledge that we've tried it before...
