I start off with saying I'm a "web designer" because it's broad. If I'm speaking to someone who is in tech I'll say UI designer or product designer because they know what it means. Audience matters :)
I learned the same thing over the years. At the end of the day, we are all web designers....
or maybe I am a User-Centric Rockstar Product Interface Experience Designer and Writer!
It depends on who you're talking to.
If it's someone's mom, I'll probably just say, "I'm a designer, I work on designing mobile apps and websites"
If it's someone in the industry I'll say, "I'm an experience architect specializing in IoT and AI"

personally, i start off with my name.
I improve people's daily life in digital world
I just tell people I'm a designer. If they're interested, I explain that it entails research, testing, understanding how people use products, working with engineers and business people.
Personally I don't think there's much point trying to expain 'user experience' - everything in UX is a design discipline, and people usually at least have a vague sense of what designers do.
As far as I am concerned the real added value of a usability specialist is observing the user.... so I present myself as the person working on the human element of the project and not the technical one. Yes, I do some wireframes but the real benefit of having a UX is to do pre/post usability tests / interviews.
