At the very least, there should be a third option. It isn't just man & woman.
What else is there? Hermaphrodite?
I'm all for gender inclusion but when one asks a question based on science (sex vs gender) then there is only so many options. Regardless of what current culture would like to refute.

Gender is more of a social construct. Sex is one of two things.
So in that case, if you're asking how people identify their gender: Male, Female, Other.
If you're asking what someone's sex is: Male, Female
